Cooking with my Air Fryer | Creamy Tuna Rice Casserole Recipe.

And just like that - it's November. This year will soon be over, and well, it's not as fruitful or as eventful as I had hoped it to be. I guess most of you feel the same way because of the situation we're all in (damn you, coronavirus!). On the bright side, the community quarantine made me rekindle my love for plants and gardening, gave me a chance to binge-watch all sorts of series on Netflix, allowed me to indulge in aromatherapy and essential oils, and made me very productive in terms of housework (kitchen work, to be exact). 

Speaking of kitchen work, I'm back with a new recipe. Yay! I just realized that I have been out of circulation for almost two weeks. Sorry for the lack of updates, but we've been busy with school stuff - projects, unit tests, you know the drill. Thankfully, Yue won't be having classes this week (both synchronous and asynchronous) because the school will be giving the kids some sort of 'health and wellness break'. That means plenty of time for me to bake and try out new recipes, and finish the first season of Black Clover on Netflix.

Today's recipe is Creamy Tuna Casserole, which I discovered in Nestle Cream Philippines' Create with Cream website. I tweaked it just a bit to my liking. Here goes:


Creamy Tuna Casserole

Ingredients:
2 Tbsp butter
2 cloves garlic, minced
1 small onion, chopped
1 medium tomato, chopped
1 can shredded tuna, drained
1 cup mixed vegetables (carrots, corn, green peas)
1/2 cup water
1 pack 125 mL Nestle All-Purpose Cream
2 cups cooked rice (Japanese rice or Dinorado)
1/2 bar quick melt cheese
salt and pepper to taste

Ingredients for the Creamy Tuna Rice Casserole.

Procedure:
1. Saute garlic, onion, and tomato in butter.
2. Once the onion has slightly caramelized and the tomato has softened, add the mixed vegetables to the pan. Saute for a minute, then add the shredded tuna. 
3. Add the water and Nestle All-Purpose Cream. Gently simmer and season with salt and pepper. Remove from fire once the mixture thickens.
4. Spread the rice in an oven-safe pan. Pour the cream mixture and grate cheese on top. 
5. Set your air fryer to Bake mode and bake at 170°C for 15 minutes or until the cheese turns light golden brown. Serve warm.
6. Optional: Scoop them on seasoned nori sheets, Sushi Bake style.

Foodie Goodie | Nestle KIMY Ice Cream.

A bagful of goodies from Nestle Ice Cream arrived at my doorstep today.
Thank you, Nestle Ice Cream! :)
And when I say 'bagful', I mean it literally. This insulated bag was filled to the brim with the all-new flavors of Nestle KIMY.

This ice cream range offers the benefit of being good for the kids' health as their products are compliant to nutrition recommendation. Meaning, these ice cream products contain adequate levels of sugar, fat, and sodium, and have no artificial flavors.

Aside from that, Nestle KIMY come in unique shapes, eye-catching colors, and yummy flavors that kids will surely love. Here's a rundown of the KIMY variants that I received:
Top to bottom: KIMY Jelly Tongue, KIMY Krazy Banana,
KIMY Lollifuns, KIMY Chill Blast, and KIMY Popstar.
KIMY Chill Blast - The latest addition to the KIMY range, the Chill Blast is a refreshing, dual-layered, grape-flavored ice lollipop with a blast of cooling effect. One pack contains two lollies, with each lolly containing only 42 calories.

KIMY Popstar - Ice lolly with white chocolate coating and popping candies.

KIMY Krazy Banana - Vanilla ice cream covered with grape-flavored jelly peel.

KIMY Lollifuns - Multi-flavored ice pops that come in fun shapes and colors.

KIMY Jelly Tongue - Apple-flavored jelly pops.

My family and I enjoyed these fruit-flavored treats a lot. Even my grandmother, who usually stays away from overly sweet things, loved how these ice pops 'tasted like fruit, and had just the right sweetness'. But it was my niece who enjoyed the experience most of all. She had fun identifying the colors of the ice pops and eating them at the same time. Haha!

Foodie Goodie | Nestle Temptations Dutch Speculoos.

If I remember correctly, it was around this time last year when I first saw Flavors of the World in the ice cream section of the local supermarket. It's a range of premium ice cream under the Nestle Temptations line, with flavors featuring some of the best and most popular desserts around the world.

There are four different variants in the Nestle Temptations Flavors of the World line, including the newest addition - Dutch Speculoos. I had the chance to try this flavor, after receiving some samples from Nestle Ice Cream Philippines.

 They sent me two 800 mL tubs, plus an insulated messenger bag, and a post card.

As the name implies, this variant features speculoos - spiced, shortcrust biscuits that originated from the Netherlands.

Tempting, indeed.
This speculoos-flavored ice cream is blended with ribbons of cookie butter ripple and cookie chunks. It's like your favorite cookie butter spread and cinnamon-spiced cookies rolled in a bed of creamy vanilla.

It has a very creamy texture, with just the right amount of sweetness. Not over-the-top, not saccharine, and not cloying, either.

So if you're doing the groceries this weekend, you might want to give this ice cream a try. It sells for Php 199 per tub, and is now available at leading supermarkets and convenience stores.

Foodie Goodie | Japanese KitKats!

If you're following me on Instagram, then you must have heard about the news that I'm currently in KitKat heaven, thanks to Kitkat Queen MNL. She held a contest a few weeks back, and luckily I won! The prize, which landed on my doorstep last Tuesday, was a sight to behold.

The box is that of the Strawberry Cheesecake, but inside are twelve mini KitKats in different flavors. The Queen repacked them as such for me to be able to try not just one, but twelve flavors of the elusive Japanese KitKats.

It would have been so easy for me and my little KitKat monster to finish this box in one sitting, but I'm trying to restrain myself as the calories would all pack on my hips. Haha!

A friend of mine asked me which flavors are the best. If I were to narrow it down to five, then my selection would be: Strawberry Cheesecake, Cinnamon Cookie, Lectier Pear, Amaou Strawberry, and the ever-popular Matcha Green Tea. My son, on the other hand, loves the Citrus Golden Blend. I'm thinking of getting a box of them orange KitKats because the little man kept on asking for more.
